Papaya Salad, Sweet & Sour (Som Tam)

INTRODUCTION: 

Papaya is like a sword to prevent disease.
Helps in digestion, reduces the risk of heart disease. Heals wounds. Beneficial to the skin helps to treat infections.
Every day at least one thing should be put on the papaya food list. Be it salad, mash, curry, or ripe fruit.
So let's start today.

REQUIRED KITCHENWARE:
  1. Chopping Board
  2. Cutting knife
  3. Wooden / Iron Mortar
  4. Julienne Slicer
  5. Mixing Bowl
  6. Whisk
  7. Spoon

INGREDIENTS & QUANTITY:
  1. Green Papaya- 150 gm
  2. Carrot- 50 gm
  3. Tomato- 1 Medium Size
  4. Long Bean- 2 pcs
  5. Red Chili- 1 tablespoon
  6. Garlic Clove- 2/3 pcs
  7. Tamarind Sauce- 1/3 cup (Or Lemon Juice)
  8. Soya sauce- 1 teaspoon
  9. Water- 1/3 cup
  10. Brown Sugar- 1 tablespoon
  11. Olive Oil (Optional)- 1 tablespoon
  12. Roasted Peanut- 2 tablespoon
  13. Salt- to taste
  14. White pepper- 1 teaspoon
  15. Basil leaves.
DIRECTION: (Step-1)
  1. Wash all kinds of vegetables with cold water and peel them.
  2. Papaya, Carrot cut by Julienne Slicer shown in the picture:


  3. Add tomato, Long bean, Garlic clove, red chili, and peanut
  4. Take a wooden mortar and pour all vegetables then add salt to taste after then flattened softly by mortar handle, when becomes juice from vegetable then stop.
DIRECTION: (Step-2)
  1. Now make sweet & sour sauce: Take a bowl and add Brown sugar, Tamamaring sauce, Soya sauce, white pepper, and water. Blend by whisk after then pour in a mortar and mix well all together. Shown in picture:


  2. Check to season, Salt as much as you like.
  3. Also, you can add a little bit of extra virgin olive oil (Optional)
GARNISHING: Take a salad bowl, I used a Turkish bowl that I had it. 
Transfer salad from mortar to bowl. 
Decorate with basil leaf, or you can use celery or dill as you like.
